Nibbley's Cafe in Klamath Falls - Home of the Famous Oakcakes

Nibbley's Cafe in Klamath Falls is the home of the famous oatmeal cookies. Once she tastes for breakfast, we can see why they are famous. Debbie Caldwell and her staff do a phenomenal job.

When you walk into Nibbley's, you're in a warm, friendly atmosphere. As you enter the dining room, you will pass beautiful pastry cases filled with goodies that can be difficult to escape. The walls are a collection of quilts, many stories that Debbie is happy to share adorned say. Debbie is quick to say,"Do what you love, love what you do and the money will follow."

How difficult is it to order breakfast? In this case, it was incredibly difficult. There were so many ways it was a challenge to choose. Our group ordered a variety: Corn beef hash, homemade corn beef with peppers, onions and potatoes country, with two eggs and toast throwing, Breakfast Burrito, peppers, onions, potatoes, sausage, bacon, ham and scrambled eggs in a warm tortilla, Jack and cheddar cheeseand salsa on top served topped with guacamole and sour cream, Mexican Scramble, corn tortilla strips, eggs, green chilies and onions, scrambled eggs with melted jack cheese, with sour cream and salsa and fruit, and of course Nibbley's Hearty oatmeal cookies a hint of cinnamon. Norm had no idea of the size of the oakcakes and ordered three. Needless to say, he ate about half. I had one page, instead of sharing with my Mexican Scramble Toast that I have with a friend. It was plentiful anddelicious. When I return, I will probably only the oakcakes.

Our breakfast fare only scratching the surface of what Nibbley to offer on the menu. They offer products for the carb conscious, as well as tofu and just about anything you want. Mint Chocolate Squares (brownies)

Brownie
2 cups margarine
8 ounces baking chocolate
8 eggs
1 tsp. Peppermint extract
4 cups sugar
2 cups flour
2 cups chopped walnuts

Melt chocolate and margarine in the microwave until it is melted, stirring occasionally.
Mix eggs, sugar and extract.
Flour, then beat in melted chocolate mixture.
Fold in chopped nuts.
Divide mixture evenly between two well -not handle greased baking trays.
Bake at 350 degrees for 25 minutes. Cool.

Fill
2 cups margarine
4 teaspoon peppermint extract
12 cups powdered sugar
To make milk, easy to spread

Cream margarine and sugar, add extract and enough milk to the spread smoothly and easily.
Evenly over brownie cake in two pans.

Chocolate Glaze
4 tablespoons butter
4 ounces baking chocolate

Melting into the microwave, stir untilThe mixture has a smooth consistency. Pour the mint texture and tilt pan until the chocolate evenly distributed.
Enough for two pans.

Chill thoroughly before cutting into squares. Nibbly are 4 x 5, but you can cut them any size. The cutting of bars, dipping knife in hot water often works well.
